Historically, probiotic roles have been ascribed primarily to Lactobacillus acidophilus. The genus Lactobacillus presently comprises more than 50 recognized species of non pathogenic bacteria which in addition to their probiotic effects are useful to human as indispensable agents for the fermentation of foods and feed. Lactobacillus helveticus (strain 2038) is a thermophilic, homofermentative lactic acid Gram-positive bacterium isolated from traditional dairy products of minority nationalities in China. It is used in the manufacture of Swiss type and long-ripened Italian cheeses, such as Emmental, Grana, and Provolone cheeses. Compared to other species, it possesses a high proteolytic activity, which is generally associated with the flavor properties and biological activities of the fermented products.
